Presenter at the Plant2Food kick-off event: Rikke Matthiesen, Project Manager at FermFood

The transition towards a more plant-based diet is crucial but it raises challenges that need to be solved. In the search for new alternative plant proteins, we have to make sure we know what we eat – i.e. breakdown of anti-nutritional factors, toxic compounds, allergens etc. Rikke Matthiesen from FermFood will address this challenge in her pitch at the Plant2Food kick-off event.
