The design and development of new plant-based food products present a complex, multidimensional challenge - one underscored by the fact that nearly 80% ofnew product developments fail. To address this high failure rate, AI-powered innovation assistants are increasingly essential for integrating all facets of prototype recipe formulation, process design, and prototype assessment.
 

AI has shown successful in capturing complex functionality of plant-based ingredients provided sufficient experimental data is available. We would like to adapt a combinatorial assessment system developed in the pharmaceutical field and use AI to extract critical data from a high throughput experimental system to generate predictive models that can identify promising product formulations.
