Globally, soybeans are a key food due to their high protein and energy content. They have attractive processing and nutritional properties, but the competition from the world market is high and cultivation in Denmark has been challenging due to a lack of varieties which can grow successfully under Danish conditions.However, projects like GrainLegsGo show that it is relevant to further investigate cultivation of lupin and soybeans for human consumption in Denmark.
The goal of the project is to establish Danish cultivation of lupin and soya beans for food with good nutritional properties (high protein and oil content, optimal amino acid composition) and low climate and environmental footprint. We work with the entire value chain from cultivation, quality determination processing and sales of lupins and soybeans for human consumption. We aim to optimise the cultivation of lupins and soybeans so that the raw material has a high nutritional content and low levels of anti-nutrients. Additionally, we investigate the processing properties of the raw materials on a laboratory scale and at three food producers, and determine the climate and environmental impact of Danish lupin and soybeans for food food compared to raw materials imported from abroad. The economic impact is determined, and we analyse opportunities and barriers in the value chain to increase market potential through interactive stakeholder workshops to increase the market potential for Danish raw materials of the two legumes.
