Unveiling food at the microscopic scale

"We see a gap in the understanding of plant food structures at the microscopic scale, so here we offer a microscopy platform particularly useful for projects on food structure and texture. The types of food matrices can vary. The platform includes a range of microscopy techniques for both structural investigations of e.g., protein, fat, and water distributions, and further covers techniques for dynamics investigation of e.g., enzymatic or microbial activity, or changes induced by physical, chemical, or physicochemical perturbations. Further, it includes quantitative image analysis, used to bridge molecular and macroscopic characterizations of foods including rheology and texture analysis."
