Screening the food potential of plants
"Selecting the best plants and processing conditions for making new plant based foods, that people might actually buy, is a long and tortuous path. Accurate high throughput screening (HTS) could accelerate the “food potential” of plants. Screening methods for liquids are established. However, there are challenges in using them for soft solid foods originating from their very nature. Foods are multicomponent, multiphase systems in thermodynamic non-equilibrium with properties dependent on the raw material and process history. What would it take to screen all the plant materials and pick the best to make a food product that consumers want (at an affordable price)?"
