'We envision a project where we can gain new technological insights into extrusion technology and apply these to create better texturized products using less-processed raw ingredients for novel protein-rich products. The use of mathematical models and enzymes could ensure superior physical, chemical, and sensory properties compared to existing products. We will focus on food safety and novel applications of the produced products, which will ensure readiness for consumption of these novel products.'
