Join Sumesh Sukumara's pitch Thursday 11 May 9:00-9:30. Sumesh Sukumara is a Senior Researcher and Group Leader at Technical University of Denmark, DTU Biosustain.
"Agriculture has supported humankind for centuries. Despite our ability to practice agriculture at scale, we still haven't mastered properly utilizing agricultural residues and underutilized fractions along the supply chain. Hence, it is critical to discover sustainable alternatives to convert agro-waste/side streams to edible and nutritious components. We develop knowledgebase of novel methods, transformations, and eventually products to foresee the utilization of side-streams from agriculture and food processing. The open-access knowledgebase will provide strategic insights to the food-tech community by quantifying various envisioned supply chains' socio-economic and environmental performance."
